Chicken Pepper Masala

Chicken Pepper Masala Ingredients   Chicken -500gm  Onion - 1 (finely chopped)  Ginger Garlic paste - 1tsp  Curry leaves - 1sprig For temper : Oil -1.5tbsp Cinnamon - 1small stick Cardamom - 2 Cloves -2 Salt - as you need For grinding   Pepper - 1.5tbsp Cumin seeds - 1tsp  Fennel seeds - 1tsp Method : 👀First grind the masala powder under grinding and keep aside  👀Wash and clean the chicken  👀Now take a pan and add oil, cinnamon, cardamom, cloves let it temper, add the chopped onions and saute untill change light brown colour  👀Add the Ginger garlic paste and saute untill raw smells goes off 👀Then add the washed chicken and saute for 5mins without adding water (coz chicken release some water)  👀Now add the freshly grounded masala powder and mix it,  add little water and adjust the consistency  👀 Once it's cooked garnish with curry leaves  Notes   *** Use freshly grounded masala powder ,so that you can feel the...

Roadside Kalan Ingredients -1 Mushroom - 100gm (finely chopped)  Cabbage - 200gm (finely chopped)  Garam masala - 1/2tsp Kashmiri chilly powder - 2tsp Ginger Garlic paste - 1tsp Salt - as you need Maida - 2tbsp Corn flour - 1.5tbsp Oil - for frying  Ingredients -2 Oil - 2tsp Onion - finely chopped  Turmeric powder - 1/4tsp Chilly powder - 1tsp Tomato sauce - 1tbsp Soya sauce - 1/2tsp Water - 1/4cup For garnish Onion - finely chopped  Corriander leaves - finely chopped  Method : 1. Clean the mushroom , cabbage and finely chopped them & keep aside 2. Take a wide bowl and add under ingredients-1 and mix together, don't add water,mushroom have enough water 3.Make a small ball and fry them in oil 4.Now take another pan and add oil, onion and saute well for 2mins. Mathi fry/Sardine fry Ingredients : Mathi fish - 6 pieces (cleaned)  Shallots - 4 Turmeric powder -1/4tsp Chilly powder - 1tsp Corriander powder - 1tsp Cumin powder - 1/2tsp Sombu podi-1/4tsp Fenugreek powder -1/4tsp Pepper - 1/2tsp Rice flour - 1tsp Salt - 1tsp Oil - for frying  Method : ▪️Clean the fish and put 4-5 gashes on both sides ▪️Take a mixer jar and add shallots and other ingredients and make a fine paste   ▪️Apply the grounded paste on the fish and leave for 30mins  ▪️Now take a wide fry pan and add oil (not too much) and place the chicken carefully and cook for 10mins, turn it back on another side cook for another 10-15mins ▪️Serve the fish with hot Sambar rice, rasam rice

Mushroom Briyani / காளான் பிரியாணி  Ingredients   Mushroom - 200gm Seeragasamba Rice - 2cups  Onion - 2(thinly sliced)  Ginger garlic paste - 1tsp Green chilly - 4 Tomato - 1(big) Turmeric powder - 1/4tsp Chilly powder - 2tsp Corriander powder - 1tsp Garam masala /Briyani masala - 1tsp Curd -1/4tsp (diluted)  Corriander leaves - few Mint leaves - few Water - 3cups  For tempering " Oil - 2tbsp  Ghee - 1tbsp Cinnamon - 1stick  Cardamom - 2 Cloves - 2 Bay leaves - 1 Star anise - 1 Method : 🔸First clean the mushroom in running water and cut into medium pieces 🔸Then Soak the rice for 30mins, wash it and keep aside  🔸Take a pressure cooker  add oil, ghee and add cinnamon, cardamom, cloves, bay leaves and star anise let it temper  🔸Now add the onions and saute well until it will turn brown colour and add green chilly and Ginger garlic paste and saute till the raw smell goes off  🔸Further add the tomato and saute till its soft an...

Chinna Vengaya Poondu Kulambu / Puli Kulambu  Ingredients   Sambar onion /Shallots - 10 Garlic - 15 Tomato -1 (small)  Tamarind juice -1/4cup (thick)  Turmeric powder -1/4tsp Chilly powder - 1tsp Corriander powder - 1/2tsp Kulambu powder - 2tsp Jaggery - 1small piece For tempering : Gingely oil /Nalennai - 3tbsp Mustard seeds -1/4tsp Urad dhall - 1/2tsp Fenugreek -1/8tsp Curry leaves - 1sprig Method : 🔸Take a kadaai (I used iron kadaai) add oil, mustard seed,urad dhall, Fenugreek seeds,cury leaves and let it temper 🔸Add the onions and garlic and saute for 2mins and add the tomato and saute  🔸Now add all the masala powders (for kulambu powder I used aachi masala) and add the tamarind juice and mix well 🔸You can add extra water and let it cook well and bubbles will come from kulambu,adjust the consistency (it will be thick ) 🔸Finally add the small piece of Jaggery, it will give extra flavour to the kulambu 

Aloo capsicum Masala

Aloo capsicum Masala Ingredients     Potato - 3 (medium)  Capsicum -1 Onion - 1(big,finely chopped)  Tomato - 1 Ginger garlic paste - 1tsp Turmeric powder - 1/4tsp Chilly powder - 2tsp Corriander powder - 1tsp Garam masala - 1/2tsp Salt - as you need  Corriander leaves - few Ingredients for tempering Oil / butter - 1tbsp Cinnamon - 1stick  Cardamom - 2 Cloves -2 Method 🔸First cut the potato in medium size cubes, also cut the capsicum in medium size as show in picture  🔸Take a kadaai and add oil and add cinnamon, cardamom and cloves,let it temper  🔸Add the finely chopped onions and saute well till its change colour and tomato and cook untill it's soft and mushy  🔸Now the potatos and mix, add chilly powder, corriander powder,salt and little water.. Orange Cake🍊 Ingredients   Egg - 2 Sugar - 1/2cup Oil /butter (melted) - 1/4cup All purpose flour - 1cup Baking powder - 1tsp Orange Zest - 1tbsp Orange juice - 1/2cup Method : 🔸Preheat the oven 180C for 10mins  🔸Take a bowl add egg and sugar and whisk for 3mins  🔸Now add the oil/melted butter and whisk again,now seive the all purpose flour and baking powder and give a gentle fold with spatula (don't use whisk)  🔸Add the orange zest and orange juice and gentle fold 🔸Pour the batter in greased cake tin or loaf pan  🔸Bake them for 45mins or untill a toothpick inserted and comes out of clean Note : 1. Either you can use oil or butter both will give nice flavour (I used butter)  2. Don't use whisk after you  added flour

Tomato Chutney/தக்காளி சட்னி Ingredients   Tomato - 2 (medium size)  Shallots / small onion - 6 Red chilly - 5 Salt - as you need Oil - 1tsp Urad dhall - 1/4tsp For Temper : Oil - 2tsp Mustard seed - 1/4tsp Urad dhall - 1/4tsp Curry leaves - 1sprig  Method : 🔸Take a kadaai and add oil and urad dhall, saute onion till its transulcent  🔸Add tomato and saute till its soft and mushy and add salt  🔸Once it's cool down, grind it  🔸Take tadka pan and add oil,mustard seed, urad dhall let it temper and add the curry leaves

Pressure cooker Vanila Cake Ingredients : All purpose flour – 1.5 cup Powdered sugar  - 1cup Egg   -  2 Butter (salted) – 1/2 cup Baking powder – 1.5 tsp Vanilla essence – 1/2 tsp Milk – 1/2 cup Method : 🔸First grease with butter in cake tin and dust some flour & keep aside  🔸Now preheat the pressure cooker for 15mins with one layer of salt  🔸Take a bowl and add the butter and whisk well (you can use electric batter)  and add the powdered sugar and whisk well 🔸Add the egg one by one and beat again  🔸Now add the Vanila essence and beat, then seive the flour and baking powder and whisk well  🔸Finally add the milk and mix again  🔸Pour the batter into cake tin  🔸Place the vessel carefully inside the cooker. 🔸Close the cooker and bake for 40mins to 1 hour with low flame  🔸Check after 40mins with wooden pick or knife, if it comes out clean your cake is ready else bake for some moretime Note : ** Everything should be ...

Prawn Masala / இறால் மசாலா  Ingredients   Prawns - 500gm Oil- 2 tbsp Ginger garlic paste - 1tsp Cumin seeds - 1/4tsp Onion - 1 (finely chopped)  Chilly powder -1tsp Curry leaves - 1sprig For grinding : Oil-1tsp Cinnamon - 1stick Cardamom -2 Cloves -2 Pepper - 1/2 tbsp Cumin seeds - 1/2tsp Small onion/shallots- 10  For marination : Salt - 1/4tsp Turmeric powder - 1/4tsp Chilly powder - 1/2tsp Preparation : 🔸First clean the prawns and remove the vein completely, Add salt,turmeric,chilly powder and marinate for 30mins 🔸Take a wide pan and add oil, cinnamon, cardamom, cloves, pepper, cumin seeds,onion and saute well in the low flame, once its cool down completely grind it fine paste  🔸In the same pan add oil and prawns,ginger garlic paste and saute till the prawns remove the water, don't over cook the prawn,  🔸Just strain the water and keep aside 🔸Take a pan and add 1.5tbsp oil and add cumin seeds and let it temper and add the finely chopped onion and sa...

Mochai Payaru Curry / Mochaikottai Puli kulambu  Ingredients   Mochai - 1/4 cup Potato - 1 (big size)  Oil - 1.5tbsp Mustard seeds-1/4tsp Shallots - 10 (chopped)  Garlic - 7-8 Urad dhall - 1/4tsp Curry leaves - 1sprig Salt - as you need  For grinding : Oil - 2tsp Fenugreek - 1/8tsp Shallots/small onion - 5/6 (chopped)  Tomato - 1(medium size)  Tamarind - (small lemon size)  Red chilly - 5 Kulambu powder - 1tsp Coconut - 2tbsp Preparation : 🔸First dry roast the mochai untill it change light brown colour and cook the mochai in water  🔸Clean the potato and remove the skin and cut them as a medium size  🔸Take a pan and add 2tsp oil, Fenugreek seeds, small onion, tomato, tamarind,red chilly and saute well in the medium flame and once it's done, add coconut and saute for 2mins  🔸Once it's cool down completely,add kulambu powder & some water & grind it to fine paste  🔸In a same pan add 1.5tbsp oil and add mustard seeds,...
