  Seppangkizhangu Tawa Roast 🔹 Ingredients 🔹 Seppangkizhangu - 250gm Rock salt - 1tsp Turmeric powder - 1/4tsp Kashmiri chilly powder - 1tbsp Red chilly powder - 1tsp Garam masala - 1/4tsp Rice flour - 1tsp Lemon juice - 1tsp Oil - 1tsp Salt - as you need Curry leaves - 1 sprig (finally chopped)  Oil - 3tbsp Method : 🔹Wash the kizhangu and pour 2 litre water in sauce pan and add kizhangu & cook for 15mins or untill it get soft, add 1tsp rock salt ( don't over cook and mushy)  🔹Once cooked remove the skin and cut into round shape or as per your choice 🔹Add salt, turmeric powder, Kashmiri chilly powder,red chilly powder,garam masala, rice flour, salt, lemon juice, oil,curry leaves  and gently coat well to cooked Seppangkizhangu  🔹 Let's marinate for 5-10mins 🔹 Take a nonstick pan or cast iron and add 3 tbsp oil and add the marinated kizhangu one by one..  🔹 Cook for 5mins and gently turn into another side and Cook for another 5mins  🔹Serve...

Garlic Pepper Chicken

  Garlic Pepper Chicken Ingredients - 1 Chicken -500gm Oil - 2tbsp Small onion - 100gm (finely chopped)  Garlic - 1 full (roughly chopped) Turmeric powder - 1/4tsp Curry leaves - 1sprig  Corriander leaves - for garnish Ingredients -2 (for grinding masala)  Whole pepper - 2tsp Cumin seeds - 1tsp Fennel seeds - 1tsp Dry red chilly - 3 Cinnamon - 1( small piece)  Cardamom - 2  Cloves - 3 Method : 🔹 Dry roast the under ingredients-2 and make a fine powder and keep aside  🔹In Kadaai add oil,  finely chopped onion and saute well,  after 2 mins add roughly chopped garlic and saute for 5mins  🔹 Add the chicken and turmeric powder and give a quick mix  🔹Chicken will release excess water and water should be dry (not completely)   🔹once chicken cooked 75%, add the freshly grounded masala powder and mix it well 🔹 Close the lid and cook for another 10 minutes (medium flame)  🔹Finally garnish with curry leaves and coriander ...

  Chicken Salna/சிக்கன் சால்னா Ingredients   Oil - 4tbspn Onion - 1 (thinly sliced)  Tomato - 2 (finely chopped)  Ginger garlic paste - 1tbspn Chicken - 500gm Kashmiri Chilly powder - 1tbspn Red chily powder - 1tspn Coriander powder - 1tbspn Cumin powder - 1/2tsp Coriander leaves - for garnish Curry leaves - 2sprig  For coconut paste  Grated coconut - 1/4cup Fennel seeds - 1tsp Cinnamon - 1stick Cardamom - 2 Cloves -2 Cashew - 5 Method 🌺 In a Kadaai add oil and add onion and saute well and add curry leaves  🌺 Add ginger garlic paste and saute until raw smell go away, add tomato and saute until its get mushy  🌺 Now add Kashmiri chilly powder, red chilly powder,coriander powder and cumin powder and mix it well  🌺 Add the washed chicken and give a quick mix it with masala, chicken will release excess water and 1/2 cup of water and close with lid until chicken get soft  🌺 Meanwhile take mixer jar add coconut, fennel seeds, cinnamon, car...

Coconutmilk Chicken Kuska/ தேங்காய்ப்பால் சிக்கன் குஸ்கா

  Coconutmilk Chicken Kuska ❤ Ingredients - Oil - 2 tbsp Ghee - 2tbsp Cinnamon stick -1 Cloves -3 Star anise -1 Cardamom -2 Bay leaves -1 Onion - 1 large GG paste - 1 tbsp Green chilly - 7 (splited) Chicken - 750gm (wash and cut into medium size)  Basmathi rice - 2cups Coconut milk thick - 2cups Water - 1.5cups Mint leaves - hand full Corriander leaves-hand full Method : 🔸In pressure cooker add oil and ghee then add all whole spices .. 🔸Now add onion and saute well until golden colour then add Ginger garlic  paste and green chilly and saute well 🔸Next  add chicken & salt and saute for 10mins, add coriander leaves and mint leaves and mix it  🔸Then pour 2 cups of thick coconut milk and 1.5 cups of water & add rice and mix it gently  🔸Now close the pressure cooker and simmer it for 20 mins  🔸After 20mins open the pressure cooker and mix it gently from the corner and garnish with coriander leaves & serve hot..

  Curd rice / தயிர் சாதம்  Ingredients   Cooked white rice - 1cup (mashed)  Curd - 1/4cup Warm milk - 1/2cup Butter - 1tsp Salt - as you need  For tempering  Oil - 1tsp Mustard seeds - 1/2tsp Urad dhall - 1/4tsp Green chilly - 1 (finely chopped)  Curry leaves - finely chopped  Coriander leaves - finely chopped  Method : 🍒 For tempering take Tadka add oil mustard seeds and urad dhall let it temper and add green chilly and curry leaves  🍒 Add this to cooked and mashed rice and mix it,  now add the curd & milk and mix it well  🍒 Check salt level and add as per your choice  🍒 Add butter and mix it with rice 🍒 Finally garnish with coriander leaves  🍒 Add Pomogranete if you want

  Mutton Thokku / மட்டன் தொக்கு Ingredients :1 Mutton - 500gm Salt - 1/2tsp Turmeric powder - 1/2 tsp Water - 1/2cup Ingredients for masala Oil - 1tsp Pepper - 1tsp Cumin seeds - 1tsp  Fennel seeds - 1tsp Garlic - 3big pods  Ginger - small Piece  Shallots - 5 Red chilly - 5 Kashmiri chilly -2 Ingredients -2 Gingley oil - 2tbsp Shallots- 100gm Tomato - 2(big) Salt - as you need Curry leaves - 1sprig  Coriander leaves  Method : 🌶 Wash the mutton & take a pressure cooker add mutton  add salt and turmeric powder and make 5 whistle or until mutton get soft 🌶 Take a pan add oil and add ingredients under masala and roast it in low flame and make a fine paste  🌶 Now take a Kadaai and add oil and shallots saute until it turns light brown colour, add tomatos and it's get mushy  🌶 Add the ground masala paste and mix it well till oil ooze out  🌶 Now add the cooked mutton with mutton stock and wait until water gets observed completely ...

  Paneer Pulao Ingredients -1 Oil - 2tbsp  Ghee - 1tbsp Cinnamon - 1 Cardamom -2 Cloves -3 Bay leaves -2 Star anise - 1 Onion - 1 (thinly sliced)  Ginger garlic paste - 1tbsp Green chilly - 3 Paneer - 250gm Carrot - 1 Beans - 10 Green peas - 1/4cup Salt - as you need Garam masala - 1tsp Coriander leaves  Mint leaves  Basmati rice -1 cup  Method : 🍁First cut the paneer into medium size cubes, & take a pan add oil and shallow fry them and keep aside  🍁 In a pressure cooker add oil & ghee and add cinnamon, cardamom, cloves, bay leaves & star anise, let it temper  🍁 Add onions and saute for 2 mins and add ginger garlic paste and saute   it  add green chilly, carrot, beans and green peas and saute for 2mins 🍁 Add finely chopped coriander leaves and mint leaves  🍁 Add required salt and 1tsp Garam masala & mix it well 🍁 Now add fried Paneer and gently mix it, pour 2 cups of water and check the Salt level 🍁 Add...
