 Boondhi Ladoo



Ingredients 


Besan flour - 1.5cups

Salt - a pinch

Water - for batter and sugar syrup

Food colour - a pinch

Sugar - 1.5 cups

Oil - for frying 

Cashew - 1tbsp (broken) 

Raisins - 1/2tbsp 

Ghee - 1.5tbsp

Cardomom-1/2tsp


Method 


🔺Take a bowl and add Besan flour, salt, food colour and mix it,  now add little water and make it thick batter and add some more water and mix it without any lumps (batter should be not too thick or too thin) 


🔺Meanwhile heat oil and pour a little batter on the boondi ladle and gently tap it. Tiny droplets will fall into the oil and fry till golden brown (don't fry too much then it will be crispy) 


🔺Repeat the same process of remaining batter 


🔺 At the same time take a pan add the sugar and pour 3/4th cup of water and let it boil and it should one string consistency 


🔺 Once the sugar syrup is ready, immediately pour to boondhi and mix it gently 


🔺 Fry the cashew, raisins and add it to the mixture and also add the cardamom powder 


🔺 Let it sit for 4hours and make a round shape Laddoos


Notes:


** Each time you should clean the boondhi laddle else you won't get round shape boondhi


** Adding cloves and camphor is optional (I don't add in this recipe) 


** One string consistency is really important for ladoo


** For 1.5 cups of Besan flour I got 20 small ladoos
