Mutton Briyani/மட்டன் பிரியாணி
Seeragasamba Mutton Briyani
Ingredients -1
Corriander seeds- 1tbsp
Cinnamon - 1 stick
Cardamom - 2
Cloves - 3
Cumin seeds - 1 tsp
Fennel seeds - 1/2 tsp
Pepper - 1 tsp
Javithri - 1
Marathi muku-1
Star anise -1
Bay leaves-1
Dry roast above ingredients in low flame and grind it to fine powder

Mutton - 500gram
Seeragasamba Rice - 2cups (soak for 20 -30 minutes)
Oil - 3tbsp

Dry roast above ingredients in low flame and grind it to fine powder

Mutton - 500gram
Seeragasamba Rice - 2cups (soak for 20 -30 minutes)
Oil - 3tbsp
Ghee - 4 tbsp
Onion - 150 grams (thinly sliced)
Tomato - 100 grams (thinly sliced)
Ginger - 1 small piece
Garlic - 5 (cloves)
Green chilly - 8 (Small)
Corriander leaves - 1/2cup
Mint leaves - 1/2cup
Curd -1/2 cup
Lemon - 1/2
Chilly powder -1 tbsp
Turmeric powder -1/4 tsp
Water - 3cups
Salt - 1 tbsp
🔺First in a mixer jar add Ginger, garlic and green chilly and make a fine paste
Corriander leaves - 1/2cup
Mint leaves - 1/2cup
Curd -1/2 cup
Lemon - 1/2
Chilly powder -1 tbsp
Turmeric powder -1/4 tsp
Water - 3cups
Salt - 1 tbsp
🔺First in a mixer jar add Ginger, garlic and green chilly and make a fine paste
🔺In a pressure cooker add oil and ghee then add sliced onions and saute well and it will become light brown colour
🔺Then add the green chilly paste and saute for 3mins.. After that add the grinded powder and chilly powder
🔺Now Add chopped Tomato and wait until soft and mushy.. Then add the finely chopped corriander & mint leaves and mix
🔺Then add curd and mix it well after that add 500gm mutton & add 1 cup water and little salt (the one you measure the rice) give 6-7 whistle or until mutton get soft
🔺 once the pressure done then add the remaining 2 cups of water and add the soaked rice and squeeze half lemon juice and add extra salt if you needed
🔺Close the pressure cooker without weight and wait for 20minutes in low flame
🔺After 20mins switch off the stove and wait for another 15-20mins
🔺Open the cooker and add little melted ghee and garnish with corriander leaves
Note:
**If spices get burned the whole dish will be spoil (ingredients 1) ,so dry roast them with low flame
** Soak the rice for 20minutes and add water in 1:1.5 ratio (If rice one cup water should 1.5cup)
** Green chilly paste will give you nice flavour
