 Badhusha 





Ingredients 


Maida - 1.5 cups

Sugar - 1tsp

Water - 1/4 cup

Salt - a pinch 

Baking soda - a pinch

Curd - 1/4cup

Ghee - 1/4cup

Oil - for frying 


For sugar syrup.

Sugar - 1.5cup

Water - just to cover the sugar 

Saffron - 2 pinch

Pistachio - broken (optional) 


Method :


🔺 In a bowl add curd,salt,baking soda, melted ghee and whisk it well, now add the Maida and sugar and mix  till it crumble..  


🔺 Add water little at a time and knead well and make a smooth dough 


🔺divided into small size ball and keep aside for 10mins


🔺 Now make a small doughnut shape and put the hole on your thumb finger, Repeat the same process on remaining dough


🔺Heat the oil and the flame should be low else inside won't cook 


🔺Drop it oil and cook both the side till it will be golden colour ,Don't fry at the same time, batch wise fry the badhusha


🔺Do the same process on the next batch of badhusha 


🔺In another wide pan add sugar and add the water just cover the sugar, let it boil and make a one string consistency


🔺Add the saffron at this stage 


🔺 Add the fried badhusha to the sugar syrup and coat it well, let it sit for 5-10 minutes and remove from the sugar syrup 


🔺Decorate the broken pistachio on the top (optional) 


Notes :


** Don't add too much water while making the dough add little 

** Sugar syrup should be one string consistency else the syrup will not coat inside the badhusha

** While frying the badhusha keep the stove  in low flame

** Saffron and pista is optional 

** Eat after 3 hours to get the perfect taste
